We soak our fresh made cutting boards in a food grade oil to insure deep penetration of the oil. Then after as much oil as possible has been absorbed we finish the cutting board with our own custom blend of food grade oils and sealant to seal the wood pores so juices and debris from cutting foods does not absorb into the wood. Everything we finish the cutting board with has previously been certified food grade.
